A Passion
A project…
The project of Brasserie des Carrières was born from the passion of 2 friends for the products of their region, especially for the beer, a Belgian national specialty recognized internationally.
In June 2000, after finishing secondary school, eager to learn more about Belgian beer specialties, Julien Slabbinck and François Amorison decided to go together on a motorcycle trip. The objective? Visit the main Walloon breweries..
Ten years later,after gaining some experience in the beer sector …
for Julien, and in the wood industry for François, the 2 friends undertook their project of creating their own brewery in Basècles, their hometown..
II
A Region
Had to find a location…
The infrastructures of the previous Amorison Sawmill, located rue de Condé, had an interesting potential, but some modifications and refreshing were necessary.
The objective was to produce an artisanal beer of the region, brewed with natural regional products.
The barley is cultivated by Julien’s father on the village’s lands at 1km from the brewery and is transformed in malt at the Malt House of the Chateau located at 7km from Basècles. The hop comes in part from patches of hop cultivated at 300m from the brewery by Julien’s cousin (Jeremy Leconte). The wood, historical heritage of the site, is used to build the bacs (a kind of tray with 24 holes for beer bottles) at the brewery. They are created by the protected workshop “Le rucher” at Leuze-En-HainautThe wood chosen was the poplar, a tree from the Hainaut (the province of the brewery). Two years were necessary to acquire material for the brewery (second-hand from several Belgian breweries who did not hesitate to help the two young people) and to restore the site. Finally, the sweet smell of hop escaped the chimney of the brewery for the first time in November 2012.
III – The Diole
A Beer: The Diole
The beer still needed a name !!!
After a lot of research in the literature of the village on the past of marble workers,the term Diole appeared to be the rightcompromise. A diole was a tool used to polish marble by pulling its tail (which had the shape of a devil’s tail). The tool has indeed disappeared from memory with time, but the word “Diole” is still present in the local dialect and used in every which way. Moreover, the particle “di” also refers to the two friends of this story.
The Diole is officially available since the 21st December 2012.

Taverne Diôle
Since the 1st May 2019, a Tavern was built right beside the production site of the brewery.
In addition to enjoying the current range of six beers brewed on the premises, visitors can dine on dishes that feature local produce in line with the seasons.
The Diôle tavern offers a reduced menu (which changes every two weeks) based exclusively on fresh products, with two starters, five main courses and desserts as well as daily suggestions.
The Diôle tavern also offers you the possibility of organising tailor-made events or events for companies.

Our products
The scent is a fruity aroma possible because of a rigorous selection of various hops.
The beer sparkles finely and micro-bubbles explode on the palate to support this beer’s character.
In terms of taste, first the mouth finds the character of the beer which is typical from the beers of the Brasserie des Carrières, made possible with the special choice of yeast. Then, the fruity (citrus and exotic fruits) flavours explode inside the mouth.
The bitterness at the end is sweet and brings a refreshing sensation. It is also important to add that this beer is without any residual sugar.
The scent brings hints of caramel and roasted malts. The taste is coherent with the scent: caramelized sensations which cover a register of grilled, roasted and toasted malts.
The combination is sweet, elegant, subtle, warm and without any excess of sugar.
The bitterness is present and long in your mouth but does not get the upper hand on the aromatic dimension typical of this product. It is also important to add that this beer is without any residual sugar.
With a golden colour and a white head, this beer reveals a scent with hints of fruits (citrus, banana and yellow fruits) and cereals. In terms of taste, the fruits mix with more malted and spiced savours. It is a round and supple Belgian ale which ends on an acid touch.
A gourmet and surprising beer!
Its colour is ruby red and is supported by a nice white head.
In terms of scent, we find in addition to fruits like grapes, notes of cereals and hops which make this product quite complex.
In terms of taste, it’s the fruity dimension and not the sugar which surprises your taste buds. This beer is produced to be light which makes it very easy to drink.
The bitterness is present but is not excessive and gives to this fruity product all its beer qualities.

In terms of taste, no doubt we are on a triple beer with its fullness which brings a warm sensation inside your mouth. There is a nice balance between cereals and hop which gives this beer a persistent plenitude.
The bitterness is very subtle but persistent without being aggressive. This beer represents an incredible match between bittering and aromatic hops. It is also important to add that this beer is without any residual sugar.
Its head is made of thin compact bubbles and has a colour of dark caramel.
In terms of scent, the caramelized and toasted malts bring an interesting dimension to this beer.
The taste supports this caramel note.
With its 8.5 percent proof, a light warmth spread inside your mouth with a sweet post-bitterness which disappears but leaves a pleasant sensation.
Its colour is dark with a beautiful caramel-coloured head.
Produced with 4 different hops, without spices nor additives, its scent will seduce you with its hints of special caramelized or toasted malts. There are also notes of brown sugar.
In terms of taste, after a short acid touch, there is the complexity of the different raw materials selected to create this product typical of wintertime.
This beer has a fine warm amplitude. The bitterness is not much present so that it does not alter the degustation.
Its colour is golden blond with a thin and compact head.
Its scent offers notes of citrus fruits possible because of a subtle combination of aromatic hops.
In terms of taste, there is a first explosion of character, then the same notes of citrus fruits,
which makes this beer a very coherent product.
Towards the end, it is a fine and ample bitterness which remains for a long moment of pure pleasure.
Our hop from Basècles is not only used to produce our beers, but also for our first gin!
Made of 10 plants, this gin reveals notes of juniper with an aromatic and fruity heart of citrus fruits, cardamom, peel of sweet orange, ginger and ABOVE ALL the amazing hop from Basècles.
It is interesting to know that using hop at low temperatures avoids any bitterness but keeps the essential oils.
The scent reveals hints of citrus possible because of the combination of aromatic hops.
In terms of taste, after an explosion of character, these same citrus notes can be found.
It is an exceptional gin which will give you a unique and delicious experience.

Eco Responsibility
Deposit
- Our products are available in returnable kegs, bottles or cases. We get them back dirty to wash and sterilize them.
Recuperation
- Our cases are made of wood and can be reused.
- We collect rainwater to clean the floors and for the sanitary facilities.
- The rinse water is reused to clean the tanks.
- There also is a recuperation system for the cleaning and disinfection solutions.
- During the cleaning of the bottles, we retrieve the labels in order to revalorize the paper
- The buildings are heated with the beer cooling system (and the wort cooling).
Waste Sorting
- We sort all waste such as paper, PMC (plastic, metal, cardboard), steel, wood, etc.
Local Products
- The local barley comes from family. Concerning the restaurant, all its products come from local productors.
Social
- Specialised in industrial subcontracting which has insertion as its main mission
Dematerialisation
- So that everything is dematerialised as much as possible
Energy
- We installed 110 photovoltaic panels and our hot room is heated with pellets.
Plantation
- We have planted over 40 fruit trees so that we can create new products from our own harvest.
- We also have installed several beehives to make our honey des Carrières.
Reuse
- We use our spent grains to feed livestock and the yeasts as food for pigs.
